Have you ever heard or tasted “Ayam Ingkung”
(Ingkung Chicken)? Honestly, I just hear that kind of food when my family held
a prenatal ceremony during my 7th-month pregnancy (7 bulanan in Indonesian).
So, what is Ayam Ingkung? Ayam Ingkung a Javanese traditional dish is made from
a whole rooster then cooked with spices and coconut milk. In Javanese language,
“Ing” is taken from “ingsung” and “kung” from “manekung” which means “I pray
solemnly”. In ancient times, this chicken was usually served for Javanese
kingdom ceremonies. Currently, this dish is usually served for family
ceremonies and many restaurants provide this dish as one of their menus.

My
family cooked Ayam Ingkung in a big wok for hours until the chicken was tender
and the gravy was reduced. Before the chicken was cooked, the chicken was tie
with raffia string. Interestingly, the way this Ayam Ingkung was served in my
prenatal ceremony is the whole chicken is served to the guests and then they
took the part of the chicken by themself to be taken away. Moreover, the
roosters have big sizes. That was the first time I saw that kind of ceremonial
process.
From Google, I know that Ayam Ingkung comes from
Yogyakarta. But, in Kediri (where my husband’s family lives) Ayam Ingkung is
also well known in ceremonies, especially in my husband’s family. Next time, I
hope I can serve Ayam Ingkung again in my family ceremonies, especially for my
family from Kalimantan because we aren’t familiar with Ayam Ingkung tradition.
